Hello,
I see that I can add people to my friend list here. What can I do with them afterwards? Is it easier to create a multiplayer game with people added to my friend list? Can I view their achievements? I see that I can chat with them or view their wishlist.

I wonder what other benefits can adding my friends to my GOG list are?

It allows you to chat with them more easily yes... you can also view there achievement percentage in Galaxy and time played on specific games. You can also set up online games and join games with friends, however this is still kind of limited and is being worked on.

No voice chat currently just text...

As far as viewing achievement percentage / game time... you will see that listed on the main game page for a specific game in Galaxy. For example, if you play Witcher 3 and a friend plays Witcher 3 via Galaxy you will see this information listed under Friends Activity.

As far as joining online games with friends, I don't think many games currently support that. I know Gwent does but it is handled in game. They plan to allow users to join online games via the friends list but I don't think it's currently implemented. You can see an example on the GOG Galaxy page (look at the friends list pic at the top).
