How well does it run: Almost perfectly (So far)
Details: Tested in fullscreen 1366 x 768, with Mac driver enabled. For full/widescreen under 3dfx Glide, use ROGUE.EXE to change the game's renderer from D3D to Glide.
The main menu's cursor may have smearing and drawing issues, but otherwise should work as expected. (You can also use Tab to navigate through the menu options.) Save/loading games works as expected also. The main bugs often associated with this game -- crashing between missions and running too fast on modern systems -- have not been observed as of yet.
Gameplay seems to work perfectly, with no rendering issues and no problems with this game's infamous "runs too fast" bug. It's also recommended to launch this game with Rogue Squadron.exe. Also, remember to change WINE's Windows version to Windows 98 in winecfg.
