The ones you buy here are theoretically unlimited, except in rare cases when a game is removed from the catalogue (see Fallout). There are occasionally promotions where coupons with a limited viability are given out, but those are generally clearly marked. If you buy a code as a gift from GOG, it stays valid.

It's not related to days really. The first Insomnia Promo run in three rounds, so if that's something to go by, we're now in round two and when it's done, round three should start regardless of day and time.
