It's not hard. You skin it first, then you cut it's belly and take out the entrails and internal organs with your fingers, then you just fry it. It really does taste like chicken .

Those are fancy rats. They are bred to be resistant to disease, but that doesn't mean they're invincible when it comes to pathogens though. They are actually harmless. I already have two guinea pigs, so my time and resources are put into those two. If I didn't have them, I would've gotten fancy rats instead. Also, it was hard to find a rattery in my area.
Wild rats are very different. They carry parasites and diseases, and because they live in the wild they're a little more aggresive than their civilized counterparts.

Why you want to release it?
If you're too soft to do the job, call specialists. Rats - no joke. They have parasites - fleas, which spread diseases.
Whole cities were full of dead bodies, due to Bubonic Plague, spreaded by rats and theirs fleas.

In southeast asian countries they keep a pet-python under their homes, very effective against pests.

My friends and me slew the Rat Overlord in Fountain Head just a few days ago and we could probably help you with your problem. Unfortunately we are on the Isle of Terra and I don't know if there is a short way to Canada (but I will check if the mirror portals work).

There are raccoons in my area. They'll make a mess in my back yard but I'm hoping the circle of life would kick in and they would deal with it. Where are those stupid jerks when I need them?

I used to work in pest control, did it for over 10 years. Best thing to do is set out rat poison, but that option is off the table.
Make sure you release it very far away or it will find it's way back. Also, be aware that it's just going to find its way into someone else's house or business.
I wouldn't worry about diseases and parasites, as long as you don't let the rate bite or scratch you. Even then, chances are very low. If this was a food preparation area where the rat is then it would be different, but it's not.
Are you sure there's only one rat? Often there will be a family. The main thing you're going to want to do is find the hole(s) that the rat(s) are using to get into your garage and seal it up very well (wire mesh, etc.). This can be smaller than you may image, any hole that the rat can get it's head through it can wriggle it's body through as well.
Inspect the food stored in your garage (if any), especially bags and cardboard boxes that the rat(s) may have chewed through. It's best to keep food stored in plastic containers.
