Is the GOG release any different than say...
1. The Steam-version?
2. Retail-versions?

Is there a DirectX wrapper or GOG's own API wrapper involved here?

Any new fixes, changes, or anything in the GOG version here?

To add to the saving: You can even save mid-combat, which can be used to create a glitch that allows to cheat in combat. I think the only times you can't save are: Cutscenes, dialogues and the game over screen.

Regarding loot: Some of the loot's presence is guaranteed, some of it only spawns with a chance. The items themselves are static. A warhammer, for example, never has varying stats from another one. However, a chest may be set to spawn a warhammer with a chance of only 20%, or it may be set to spawn a weapon from a list of valuable weapons with a chance of 80%, which may be the warhammer or any other weapon from the valuable weapons list. The game determines the loot in containers when entering an area for the first time.

Also, as mentioned, there are skills that govern your chance to successfully harvest plants or salvage materials from animals, which also check for their governing two to three attributes. But (afaik) they govern your chance for loot, not the types and amounts of it. You could attempt to harvest a mushroom with very little wilderness survival skills, get a lucky dice roll and manage to harvest three units of that mushroom. But you could also get only one unit with a higher wilderness survival skill.

Crisco1492: As someone who's never actually played Drakensang, how hardcore should I expect it to be? Morrowind levels of difficulty, or Skyrim levels.

Mafwek: Well, both Morrowind and Skyrim are piss easy. I remember beginning to play demo of this game, but never getting far. I also remember reading that this game really doesn't like spellcasters.
Morrowind isn't easy, you just can easily break the game if you try to max specific skills (which is fun in its own way).

In the german forums someone said that the GOG version launched in fullscreen without issues (other than retail and steam version which have problems on Windows 10), that the original voice acting is included and that savegames from other game versions seem to be compatible.

Dies ist jetzt die einzige Version, die ich habe, bei der Start direkt gelingt.

Meine anderen Versionen (Collector's Edition und Platinum Edition) haben die Vollbildprobleme mit Windows 10.
Das Spiel ist in Deutsch. Alle Texte (wie bei GOG angegeben) und die Videos und die ersten Sätze der NPCs sind mit deutscher Sprachausgabe.

Meine alten Spielstände von 2008 lassen sich wieder verwenden.

Insgesamt das beste Paket (keine Startprobleme und DRM frei) von Drakensang bisher auf dem Markt.

Der Schalter (Parameter) -fullscreen wird bei der GOG Version nicht verwendet und auch nicht benötigt.

Tipp:
Will man später auf die Intro Movies verzichten, so sollte bei der Desktopverknüpfung zur drakensang.exe ein " -novideo " angefügt werden. Nach dem Start gelangt man sofort ins Hauptmenü.
Beispiel: "E:\Drakensang\drakensang.exe" -novideo

Looking forward to River of Time as well, to have a complete edition - I have always thought they would be released simultaneously :)

Now this is a lovely sight! A perfectly serviceable German isometric RPG that had the unfortunate fate of being compared too much with the original Dragon Age, despite having nowhere near the budget. Thank you GOG, River of time next, please!

Alright, if I am going to be honest, I think we can all agree that objectively speaking, difficulty in games is - completely subjective :)

Leaving the realm of subjectivity outside, I do believe Morrowind isn't difficult game when we are speaking about combat, but what is difficult is lack of quest pointers and finding the way you need to go. Morrowind is much easier than Oblivion when it comes to combat, because it is much easier game when it comes to controlling your leveling.
Time for your regular Wine report... seems there are some issue on the audio side with the latest Wine version (5.22) at the time of writing. I get warning messages from wmav2 then the game crashes after a couple of minutes, though all the audio plays fine as far as I can tell. It might need an xact winetrick to work properly, though I've yet to test it.

Not exactly smooth sailing for Linux folk, be warned.
