Try "Spintires" and "Spintires:Mudrunner". Driving big, tough Russian trucks around Siberia through mud, water, forest, etc. delivering logs to lumber mills. No timers, no stress, beautiful scenery with night and day effects. Active modding and multiplayer community. Two of my favorite games. Unfortunately, they're only available on Steam.

I have a couple suggestions ;-)

Sadly, the traditional flight sims on GOG are military-based. On Steam I would recommend the following:

Microsoft Flight Simulator X (already mentioned)
X-Plane 11

For driving:
Euro Truck Simulator 2
American Truck Simulator
Traversing Europe or the United States making deliveries while having your road tunes playing is very relaxing.

Train Simulator (not driving per say)

Back in the day I enjoyed Flight Unlimited for this very reason...enjoying free flight.

IL-2 1946 https://www.gog.com/game/il_2_sturmovik_1946 Is fun for flying around with different planes or using them as target practice or go on bombing runs. It's up to 80% off for at least another few hours.

I think you would like Pilotwings64. Parts of it are like that game but 20 years previous.
Sounds like you're looking for a "Driving Miss Daisy" simulator.
