This is how I play Quake II. I open GOG Galaxy, click play, I select Ground Zero then click run. I start a new game. I play for awhile then save the game. The problem happens when I try to load a saved game. For some reason I couldnt get a screen shot if what comes up when I try to load the game. Its a bunch of text to the left side and the last line is Shutdown game, then I have to quit manually.

As clarry mentioned try this:
https://support.gog.com/hc/en-us/articles/115003255849--Read-Level-Error-Function-Pointers-Have-Moved-error

Also check if the installation folder with Quake 2 game has full read/write access in Win10.
This sounds like a Windows Defender setting issue. Try this fix:

1) Go to Start > Settings
2) Select Update & Security
3) Open Windows Defender Security Center
4) Select Virus & Threat Protection and then choose Virus And Threat Protection Settings
5) Under the Controlled Folder Access change the setting to "off."

Done
