I'would like to know if they are new "Simulator" games are coming?

I'bought "House Flipper", "PC building Simulator",... on steam but I had to buy them back to have them on GOG.

And I would like to prevent that from happening again ...

Honestly, you'd have to ask the developers of the games themselves. GOG won't tell you and users here won't know.
