Bethesda is well known for creating stories that take you to the unknown places and games that redefine their genres. Nothing in the games themselves, these new after the removal might have less goodies but i'm not entirely sure since i only have the old ones.

If I recall correctly the Classic games are not modified, while the newer versions contain High Resolution Patch (maybe other mods too) already installed.

Man what a bait. When I saw the Bethesda Sale banner I had high hopes that they just put some new games in here. Like literally anything new they can release in here is good for me. Next time maybe. And not in 50 years like some user above said :). I doubt I'll be around to play them at that time. :)).
PS: About Skyrim in my opinion it will be a nice surprise to release it during Christmas with the winter theme of the game.
It would be very wise if they put Oldrim on here, though for sure I can't see any of their products integrated with Creation Club being put on here for a good long while.

On the plus side, this means I can finally get the GOTYs at really reasonable prices since their debut on here four years ago, also due to the fault of my spotty absences!

No, the "Classic" versions received those exact same updates once the games returned to the store.

funny in a sad way how publishers want GOG to sell more games yet they won't give us the games to buy (I know it's usually more complex legally than that but still...)

I was hoping the original Doom 3 will finally be available, maybe one day.
Would you say Morrowind is worth it if I hated Skyrim/Bethesda games in general? I'm interested in Morrowind's plot....but Bethesda's mechanics/bugs/practices make me think I'm just going to hate it.

If you hate the gameplay loop, then Morrowind is exactly the same in that aspect. The story/plot in Morrowind is vastly superior, though it's impossible to guarantee that it'd be something you'd end up enjoying. That's entirely up to your preferences.

Ultimately, if you don't like the gameplay... :(

Oblivion and Fallout3 had a bunch of problems regarding stability, gameplay and story complexity.
Does anyone know if mods drastically fix\improve them? (and work with Gog)

Also Cliff Racers when I saw that Skyrim was about dragons I imagined Bethesdas initial idea pitch as: You know how much people hated Cliff Racers how about we made them bigger and tougher and the central element of the game.
