I'm looking for games that somehow deal with or depict psychiatry and mental health. Do you guys know of any that you can recommend?

I already own Hellblade, Sanitarium, The White Door, Suicide of Rachel Foster (and maybe some I can't remember off the top of my head) and I have a bunch already on my wantlist, but I'm always looking for more.
Kane & Lynch 2: Dog Days and Alice: Madness Returns
American McGee's Alice. Though it's not on GOG.

Ah, I forgot about the Alice games! I got both already.
What's the role of psychiatry in Kane & Lynch? I couldn't find any information on that by a quick Google search.

One of the main characters, Lynch, suffers from regular psychotic episodes where he violently attacks random people. In the second game, you play as him.
Vampire: The Masquerade - Bloodlines lets you play as a newly embraced vampire of the Malkavian clan, complete with unique abilities and dialogue options reflecting the clan's characteristic disposition towards insanity and mental illnesses.
There's also a really neat twist/revelation at the end of one particular NPC's questline that involves a mental disorder.
In Sound Mind

Thanks for the link, added the Cat Lady to my wantlist! The redux-version of Downfall is quite expensive. Is it significantly different from the original one?

That sounds interesting, thanks! Put it on my wantlist.

To be honest I still prefer the original (they changed the ending quite a lot in the redux, some other things were toned back, and the voice acting in the Redux was poor enough that I preferred the text-only original), but it's down to personal taste.
Also one of Clive Barker`s Jericho characters was diagnosed with mild autism.
