Version 3.8.4 has been released with the following features:
* Added display of and filtering by "Price History" (i.e. permanent change in price)
Note: Available price history goes back only to late May 2014 (since when 11 games have changed their price).
* Changed the defaults for the Display checkboxes to have them all checked (mostly relevant for first-time visitors and people who regularly delete all their cookies)
* Changed the behaviour of the "Set Almost All" button to also uncheck all the "My Fields" Display checkboxes

As for your suggestions:
1) What you ask for is for MaGog to maintain a history for each file in each game (when was a file added/removed), which given the number of games and files will quickly become unmanageable. I will record changes/additions/deletions in the "what did just update?" thread, but MaGog will not remember them. MaGog only stores the current state. The only time-related information I have is what GOG offers, which is file modification date/time (also covers file addition). Thus, when you search for file changes since a given date it also covers file additions (no way to differentiate the two because GOG does not offer file creation time, only file modification time). At the moment, I do not plan to remember files deleted (there are a lot of those, e.g. patches).
2) It's in the plans, I just need to figure out how to do it. Note that a lot of files (e.g. bonuses, patches, tarballs) do not carry proper language identification, so you will probably want to select "Eng + Ita + No Specific Language" when it comes to it.
3) At the moment, the simplest is to change the "Downloadable File Order" option (above the "Tutorial" button) from the default "GOG Order" to "Modification Date". This changes the order of files within a game so that they are sorted from newest to oldest. Thus, the first ones are the ones the changed most recently and are the ones you are probably interested in. Try it. If you find it lacking, I'll consider adding highlighting the files that match one's search criterion.

Don't color dates, instead, unless you're going to use a different one.
