I really like the Devil may cry games and on steam I found similar games like bayonetta, metal gear rising, castlevania: lords of shadow and the 3D ninja gaiden games.
I prefer to buy games on GOG and I wonder if there are any on GOG that I didn't noticed yet.
To be specific by "like devil may cry" I meant

focus on melee combat combos and third person perspective, so that excludes:
Elderborn or Succubus. because they have first person perspective.

No leveling up skills and stats like strength and dexterity, so that excludes:
BIOMUTANT or Risen.

No stamina meter, so that excludes:
Anima: Gate of Memories, Dragon's dogma and pretty much all dark souls clones.

no weapon looting that replaces a weapon with one that work the same and just have higher stats, so that excludes:
Darksiders 2

linear level progression, so that excludes:
Darksiders 1 and 3

a dodge roll and preferably also parry mechanic, so that excludes:
Enclave, from what I remember that game just has running and mashing slash like knife fighting in counter strike.

The games that do fit my definition and I know are on GOG are:
Assault spy, Devil's hunt, Killer is dead and Mitsurugi Kamui Hikae.
EDIT: Bloodrayne 1 & 2 also fit the description, I forgot to write them.

So... any other games on GOG of that type that I missed?

Have you checked out Bloodrayne 1 & 2? The gameplay and combat is definitely more janky and stiff compared to something like Ninja Gaiden, DMC and Bayonetta, but I enjoyed them a lot. And they fit most of your requirements.

It's called character action.

Also, Blades of Time might fit your description. I haven't played it yet, but it looks very much like it from the trailer and screenshots.

I played blades of time like 6 years ago. It's more twin-stick third person shooter, but has a number of elements where you reverse time and are in multiple places at once, with the previous instances continuing to do what they were doing. Several instances of 'stand in two/three places at once to open gate' will come up.

Though how useful that is is hard to say. I know i had a huge enemy on a bridge, so i shot him til my health was low, reversed time (enemy's health also restores) but the second/third/fourth time his health whittles down faster, as long as he didn't move from the original general area as you were shooting.

I don't remember anything particularly difficult in the game, just some plot of a dragon egg/orb that this one wizard wanted, and time manipulation only works within that dungeon/realm you were in.

If you compare to DMC/Bayonetta, it's not really close, probably closer to... Tomb Raider.
Sadly there aren't a lot of those here. Those that come to mind (and more) you already listed in your post.
Should I remember a title that isn't on the list and matches your criteria I'll update my post.

I see. Well, I'll probably play it myself eventually. It does seem interesting. And I like the TR style of gameplay as well.

Another suggestion, if OP doesn't mind using Steam: X-Blades is a fun little third person character action game.

yes we should, but capcom only have 2 game here (street fighter 2 and dragon's dogma) so I doubt capcom want to sell their popular games DRM-free.
If I ever see the DMC HD trilogy on GOG DRM-free I will be very happy, I will even be satisfied with castlevania: lords of shadow.
P.S. Blades of Time is more about shooting and puzzles than melee combos.
What you're looking for is called Spectacle Fighter.
They're sometimes grouped into the broad genre of ARPG or Action RPG, together with H'n'S like Diablos.
