GOG does not sell Steam games. You can add their games in the Steam client as a non-Steam game, but you won't have the game on Steam.

...Wut? Why would you want to use gog games on steam?
GOG doesn't sells steam keys, but rather games on their own service. On Linux there is no client software yet, but the games can be downloaded conveniently from the website. It best works with download helpers like DownthemAll! Also there are user made scripts like gogrepo which let you back up your entire library if you wish to do so.

Since there isn't a GOG Galaxy for Linux, I thought I'd have to use Steam. If I'm wrong, please tell me how to use a GOG game, which I'd prefer to do.

Go to your account, click the game box of whatever game you want to download and there should be a download under that, all on the website.

Not really, just make sure you have dependencies, wine if you want to run windows versions, etc.

Shit it's been a while since I've used linux, on mint I think there was some sort of right click command on the installer that would tell you. I really need to install mint again.

They should be listed on the store page, just use the package manager to check them & install any missing ones
Also don't forge tto label the installers as executables.
