When a patch for a game is released, the entire installer is replaced by a new one that has the latest patch applied. I'd like to play an older version of the game to see what features were changed, how the difficulty changes, etc.

When you use Galaxy, there is a "Rollback" feature that makes it possible to switch back to older versions of a game. When you don't want to use Galaxy, you can only write to support and ask them for a download of an older version.

Besides that some games that got an upgrade (to Redux, Enhanced Edition or similar stuff) have their original version included as an extra.
