PookaMustard: Well, the fact that they debuted first on Humble Bundle and not DRM-free should be a blow, minor as it is. That said, my main thought is to see these ports ported DRM-free as well, which is not a hope when you consider the titles you mentioned.
mindblast: For single player titles, i don't see why they wouldn't be DRM-free. Even if they would be on Steam, they can be DRM-free, as many other games. Now, most awesome would be for some of these titles to have multiplayer too. I really can't remember a fighting game like Double Dragon or Golden Axe that have Co-op option. I remember we were having a lot of fun on arcade machines playing these kind of games co-op. They would be awesome multiplayer.
So, in the case of an multiplayer implementation, i would definitely accept something like Steamworks servers and the DRM that would come with that. But i don't generally care about DRM, as it makes no difference whatsoever for me.
Anyway, i'm dreaming now. They didn't even wrote the keyboard bindings in these ports, you are still having the stick + colored buttons, like on arcades when you learn how to play. So, multiplayer would be long way ahead if it's planned to be implemented.
After having tried a season of being a victim of DRM, I'm in no way gonna accept it for any title that is not called Battlefield. However, if things are as you say, you were are at arcade machines playing these fighting games co-op, it should be really the same experience with these PC ports; allowing you to play local co-op and wreck havoc.
Anyways, I bought the low tier. Time to see the download sizes.

Yeah, they're all reasonably sized. But since KoF 2000 is 100MBs, I had a change of heart. I'll try out Metal Slug 2 instead, and post my experience with it here. I'll try to play at least one level, if not then show what I can see.
