Galaxy does what is says it will do. Your not looking for an offline mode, your looking for a non-Galaxy mode. I run it offline all the time. You can also run Witcher 3 without Galaxy... All it is is a shortcut issue, were the Witcher 3 points to the Galaxy client instead of directly to the exe of the game. Go to the Witcher 3 install location, and apparently the exe is in a x64 BIN folder, find it, & create a shortcut. Problem solved.

Even if you're logged out of your account in Galaxy, all the installed games are ready to play. It basically just acts as a launcher at that point.
You can also have it create a traditional desktop shortcut for any given game upon installation. Go to "Settings" and check "Create desktop shortcuts when installing games".
Offline-Mode

- Open Galaxy
- Click on your name in the top right
- Click "Log out"

You are now offline.

- Click on the game of choice from the list of installed games on the left
- Click "Play"

You are now playing in offline mode.

You are thinking about this the wrong way. There is no special online mode because unlike Steam you don't need Galaxy to play your games. Just quit Galaxy and never launch it again and you are fine, you can still play your game.

If you want to run Galaxy but not be connected, hover above your name in the upper right corner and when the popup menu opend click Log Out. It's the last menu item and it's greyed out, but it works. You can still find your games in the side bar, but you cannot download any.

You can play offline, by simply not going online before you start your game(s).

As for starting W3 without Galaxy, you just need to open the folder where you installed the game and find the game executable and run that. The default shortcut created on your desktop by the installation also starts Galaxy.

Frankly, I'm unimpressed by Galaxy myself. All the social and "convenience" features are nice, but I don't really need any of it. And it's disappointing that things like in-game time tracking and achievements apparently only work if you play while being online. Yeah, no thanks -- why would I do that while playing an offline single player game? :|

All kinds of games I played on my good old PS3 had achievements & in-game time tracking, and I never went online with that thing. For that matter, even various games on GOG have both of those features. All while being offline.

Kind of lame CDPR/GOG, just saying.

so I see you got your answer. apparently W3's shortcut was to wrap to galaxy. that said, and the bit about the logout button, I just also wanted to mention that you can toggle achievements and game time tracking in settings.

Don't you find this to be a problem? The FAQ for GOG Galaxy explicitly states that you can switch to an offline mode to play games. That means there is an offline mode. That, or it's incorrect. "Offline mode" is clearly pointing to a mode in Galaxy, as it says one might want to be offline but still "use GOG Galaxy for some aspects of the convenience."

serenityvalley: I have already downloaded Witcher 3 using galaxay, and have already started playing. I is impossible (so far as I can tell) to boot the game without also starting galaxy. I have tried manually disabling the glaaxy services on my task monitor. If I do this, and then try to start witcher 3, it requires me to restart galaxy in order to boot the game.

That is probably because serenityvalley uses the default shortcut, which as CharlesGrey said restarts Galaxy, and he needs to create another from the game's executable.

I think what Venom means their is no real way to switch into offline mode yes, but there is an offline mode. If disable your connection or log out you can start in offline mode.

The OP isn't really looking for an offline mode, OP is looking how to have shortcut for Witcher 3 that doesn't launch the client which is very possible.

Unfortunately, even after logging out, Galaxy has established network connections that persist. Even if these are manually disconnected, any time the game is launched from the galaxy client (even when logged off) it will reestablish active network connections. This seems kind of sketchy to me from a company that publicizes that there is in fact an offline mode, but even if you log out you are still, in fact, connected.

But no worries in my case, I will just uninstall it entirely.
