I don't use Galaxy myself, but as I understand it, there is no offline mode as such, because contrary to Steam, Galaxy just keeps working regardless of whether or not it can connect to the internet. So there is no need to enter a special offline mode.
Ok, I am not making myself clear.
Glalaxy specifically states that you can download a game using galaxy, but play it in "offline mode," so as not to be bothered by achievements, updates, connections etc.

That is what I am trying to do. I have already downloaded Witcher 3 using galaxay, and have already started playing. I is impossible (so far as I can tell) to boot the game without also starting galaxy. I have tried manually disabling the glaaxy services on my task monitor. If I do this, and then try to start witcher 3, it requires me to restart galaxy in order to boot the game.

How do I enter the offline mode, is my question.

Your answer delivered. There is no offline mode.

Technically, what you mean is "There is no no-Galaxy mode". I mean, the game still works without an internet connection, right?

While I don't have personal experience with Witcher 3 myself, it appears that you can still play it without Galaxy. It's just a bit more obscure than with other GOG games for reasons. You either launch the game directly from the installation folder or create a shortcut from the .exe file you can find within that same folder - if that is what you're asking.
(Someone correct me if I'm wrong or give better instructions.)
You can play everything you download with Galaxy without Galaxy.

I installed several games with Galaxy before I realized I'd rather wait for the fixed version and uninstalled Galaxy, but the games I installed with it are all there and working beautifully.

Apparently, the link created when you install W3 does automatically start Galaxy, but you can browse to the game exe in the installation folder and create your own direct link to it. Using that method to run the game, it will not auto start Galaxy and you can indeed run it "offline".

So GOG is saying there is an offline mode, and suggesting it is quick and easy to use.

Well, it looks like that is probably the easiest solution, until Galaxy does what it says it will do, anyway. Thanks.

Now you know why I stopped using it....for now. Rest assured they will get the bugs fixed and then I will probably live in Galaxy. This is a work in progress and GOG was honest about that much.

Of course the exe solution yyahoo mention is a great idea. I did that for Torchlight 2 and it was fantastic.
As a non galaxy user, can anyone copy the shortcut command galaxy uses to launch the games and copy it here please? Thanks.

I'm just about with you. I'm using Galaxy for 2 game right now (Witcher 2 and Fantasy General) just to test it out and help out with the beta. But it's a buggy mess and if I were playing W3, I'd use the downloader to get it and I'd stay off Galaxy.
