As for "dwarf fortress-likes" I also highly recommend Gnomoria.
There is also Craft the World, though its not really that complex and more akin to a mobile game.
I also think that Terraria partially fits the bill. It does give players quite a lot of power over directing how to structure your "village" however.
Rimworld (which is very akin to Prison Architect) and Prison Architect itself are also extremly close regarding a Dwarf Fortress like experience. I consider Prison Architect to be closer to Dwarf Fortress than Rimworld though but I guess it depends on your own experiences and perspectives with these games.
When it comes to the Dwarf Fortress adventure mode, I think next to its complexity is Project Zomboid.
