Don't forget to eat a maple syrup pie as well. One made with actual maple syrup, without any other kind of sugar mixed in.

Chips, Brown Gravy and cheese curds.. you can also add in shaved beef or corn beef but only in a few parts is that accepted as poutine!

Been a long time since I've baked one actually. Over a decade now I think. IIRC for the filling we used starch, egg yolk (1 for 1 pie maybe? or maybe two?), maple syrup (a bit over 1 cup per pie?) and I think that's it for the ingredients. Maybe butter too? Or cream? not sure. Also really not sure about quantities.

Started by properly whisking the egg yolk and them mixing it with the maple syrup in a pan. Then slowly bringing the syrup to a boil while incorporating the starch and gently whisking constantly until the texture was right.

Then pour into pie shell, let it cool and then refrigerate for a while. I think.

You can use flour instead of starch, but starch gives better results.

There's probably a lot of recipes out there with better directions. Just make sure you pick one that doesn't add any brown sugar or some cheap maple syrup imitation.

Don't think I'll be able to send any syrup over though. Sorry.
