Sanjuro: Probably these games are somewhat less played. I, for example, can only remember Ace Combat Assault Horizon which I played very little (although enough to know that it's not it). Oh, yes, Elite too.

What platforms was it released on?
This one was Windows only but it had a sequel / remake that was original XBox only (the sequel seems to have been remade for 360 too)

By the way, since you've played Wing Commander/Tie Fighter/X-wing games (or anyone else who has), how much viable are they with just a normal gamepad? Or a keyboard? And which one would offer me more flying freely in all directions during combat, so it's like a high-speed adrenaline ride where I zap up, down, loop around and do all sorts of dogfighting? Preferrably with a free-roaming world or quests to boot?

If you want free roaming then I'd go for one of the 'Elite' style trading games - Wing Commander Privateer series, for example

Is it one of those creepy platformers? I haven't played any of them but from your description Nihilumbra sounds like it might fit.. But I'm not sure if there are any creatures that actually talk to you.
Is a point and click adventure or more of an action game?

It's a survival adventure game.
When you mean survival adventure game, should we imagine a normal adventure game where you interact with your surroundings and have solve puzzles, or is it more something like Sir, You Are Being Hunted style? Or Amnesia style?

I'm quoting the developer's site here, that's what they called it. Without that hint I'd have problems defining the genre.
You do have to interact with the environment and some of the world's inhabitants to progress further but I don't think there are any puzzles.

Oh alright. What kind of meters do you have to refill/sustain in order not to die? Health, ammo, etc.?

This is where it gets tricky: there is no such thing as a separate healthbar or ammunition reserve. Instead you can gather, store and use various kinds of "substance" scattered all over the world that you spend on interaction with objects and persons (including "hostile interaction"); if you are attacked, you lose some of it as well. If you run out of this "substance", you lose.
One of the ways you can use this "substance" is investing it into certain environmental objects, doing so allows you to gather more "substance" of this type later - unless it is stolen by those monstrosities you share this world with.
