I bought two games for two different people at the same time and emailed the codes to myself because they don't have accounts yet. however it looks like they are bundled together and I can't figure out how to get them apart.

Unfortunately you can't. Each order is bundled as one, no matter how many games are in it. You have some options -

1) you can contact Support and ask for a refund, then buy each game separately and have the separate gift codes mailed to your email like you did before. Since it is Christmas the refund may take a few days so you would need to buy the games again now and wait on the refund of the other purchase. Be aware you cannot buy the same game as a gift within a 24 hour period which is GOG's precaution against fraud.

2) If you trust your friends and don't mind each knowing what you got the other - send the code to each friend and tell them which game is intended for them and to please only claim that game. Separate people can claim different games off the same code, it has been done before. You just have to know that you can trust them to only redeem the game you specify for them.
