Hello,
I'd like to know how can i know the last version of a game on GOG without access to my library or if the game isn't in my library? Example Caesar III is 2.0.0.9 for GOG. How or where i can get this type of information? Someware in the source of the HTML of the game?

It will tell you when you click on it on your library.

As you want but if i ask "if the game isn't in my library" and you answer "click on it on your library" well there is something strage in my point of view. Anyway, doesn't matter.
