Simon the Sorcerer 1&2. Particularly the first one has a very striking look to it, mostly due to its serene yet unnerving backgrounds.

The EGA release of Loom (Screenshots: , [url=http://www.mobygames.com/game/dos/loom/screenshots/gameShotId,62705/]2, , [url=http://www.mobygames.com/game/dos/loom/screenshots/gameShotId,62827/]4, 5). Shockingly good use of merely 16 colours. The VGA release (the one available here) generally looks good, too, but it feels much more generic (and they completely gutted all the dialogue to fit the voice acting onto the disc, which is why I really wouldn't recommend it).

The first two Wing Commander games also look absolutely fantastic.
How about the adventure games from WadjetEye, like Gemini Rue or Technobabylon?
Well, guys and gals, just to save you from an unneeded work - there's no big need to mention games that are present here on GOG, I scour the catalogue and GOG novelties very carefully :)

Blake stone? That's not retro, that was released decades ago, back in the apogee days.
