Something I could sink myself into for a very long time.
My Time at Portia is supposed to have a Harvest Moon vibe like Stardew Valley, but I haven't played it yet.

Does it have to be totally free of tension, conflict like those games?

I can think of a few that are similar in nature, with setting up, day to day life/progression, but are a little darker and, if you aren't careful, can lead to END GAME.

Also consider Terraria - just because everyone should consider Terraria
I haven't played it, but Slime Rancher, people say.

You can actually farm slimes in Stardew Valley.

Yes, that was an actual sentence that an actual person typed. :P

Oh, I've played SDV aplenty. It's Slime Rancher [which I always typo to "Slime Ranger"] I haven't.

For what it's worth, Slime Rancher is definitely up the OP's alley if s/he is looking for something like Stardew Valley.

this is fair
Forager.
Factorio, if you don't mind the absolute lack of proper farming.
Kynseed looks just like one of those games, but it's still in development.

It's definitely a similar game but not necessarily something to "sink yourself into for a very long time". Compared to Stardew Valley it's rather short (15-40 hours perhaps?). And it's first person, of course. But quite nice.
