ettac orrazib si eman ym: I don't have any suggestions, but are you certain it says M1 Macs are supported? I couldn't see any mention in the system requirements on the store page.
You might need to source an M1 native version of DOSbox as the one included is probably Intel and it could be crashing due to being run through the Intel -> ARM compatibility layer.

Can I download an M1 Dosbox, and then run the GOG through that? I thought the GOG game was tied to the dropbox version supplied
They're pre-configured but there's nothing specifically tying the game to that version of DOSbox. I'd suggesting finding an M1 compatible version and then replacing the version the game with with the M1 version. There's a good chance the GOG configuration files will still work if the executable has the same name.
I have used this method to update GOG's DOSbox and ScummVM versions numerous times (admittedly on Windows, but the same principles apply).
AB2012: You can run any DOS GOG game through other DOSBox versions includiong different variants. It might be worth trying the "Universal Binary" version of DOSBox Staging that seems like it could support both x86-64 and ARM64 (M1?) hardware:-
