The "GOG XX" ist just another way to neme the version of the installer or the patch (GOG 21 = 5.1.1).

If you download the intaller ot the game now and use the you have the newest version which includes all books.
If you already have installed an older version on your PC you need to apply a patch.
5.1.1 is newer than 5.0.3, 5.0.3 adds the fifth book and 5.1.1 seems to fix a few bugs.

On the first line in above paragraph, did you miss typing in a word? You said "if you download the installer of the game now and use the ? you have the newest version which includes all books." -were you going to type in "use the ( latest) patch"? Thanks.

If you're not sure how to do it or in which order to install the patches (usually it is mentioned which version of the game is required to use the patch here it's not unfortunatly):

Deinstall the game (you get an option to keep your savegames) and reinstall it with the new game-installer and you have the newest version with sll 5 books.

So if I download the 4 parts of Book 5 using Windows 5.1.1 (Gog-21) it is not necessary for me to download any patches, and the game should run ok?

If you don't have a previous version istalled on your PC before doing so, yes.

I have no previous version installed, so I will download the 4 parts using windows 5.11 and hope for the best :)

I thought because 5.1.1 is listed under OS: Windows, that it meant it was connected to windows . Also, the patch is 5.1.1 , so is 5.11 listed under Windows the patch and not the game version? Usually when I download a game I don't think of what the listed numbers mean and I usually know what to download, but I should also know what the numbers mean.I think I did better before I started to ask questions :)
Have you played Book 5 BTW and finished the whole game?

Windows is only written there to show for which OS the installers are and to choose your OS if others than windows are suported.

Yes I finished the last book the day it was released here.
