I don't want to stall the game any longer, so I'll post the answer and anyone's free to go next.

It was Gun Monkeys! I admit I haven't bought it yet (just played the beta) due to fund issues around the Steam sale - but it is a fun little game and I'd recommend giving it a shot when they do a demo/free weekend if you haven't played it.

So, this one involves lots of air, and is a game from my childhood. It had one of the most unique UIs and a lovely early physics based credits viewer that was manually operated with the mouse!

lol, i look at these from time to time and can sometimes guess what it is (or more often a similar game) but I have no fucking clue what that is.

I have Ultima 1-6, I just haven't thought to play them yet. Its on my backlog.
