so many of these older games that were native dos I find on GOG always make me wonder why GOG doesn't have versions for all the OS's?

I recently purchased Master of Magic, which only has a versions for linux and windows. I used to own this game back in the day(as the kids say)so I know it was an old DOS native game? I have to wonder why no MAC version? Shouldn't it be just a matter of running DosBox in Mac to make a version? Really, just a script for MACs?

I'm pretty sure I've seen other old games natives to DOS that don't have versions for every OS, it's really just a curiosity for me as to why this is.

They need permission and if whoever sits on the rights to the game hates OSX it is a no. In other words: It is a problem of licensing issues.

Unfortunately yes. For instance, Activision games here are only available for Windows. (though for DOS games you can take the files and use them in Boxer for Mac, like GOG does, I believe)
