As many people have suggested, this might be 'Quest for Glory 5'. Here are a some screenshots I took from the start of the game which have a waterfall in the town and a katta shop:

Thanks Kobi -K. Unfortunately, its not Quest for Glory 5, but I do note the similarities, like the Game Over Screen.

The style of game is quite different. The one I played was pretty much like Fallout 1, Fallout 2, Arcanum, Planescape, or so I remember.

The demo started in a city area with waterfalls. The game had a day/night system that progressed in minutes. I remember speaking to a cat(?) vendor/seller in a bazaar.

The only other thing I remember is being defeated by guards, which I think were dressed in red, and getting a game over screen, a black screen with the guard's face asking something like "did it hurt?". Not classy.

That's pretty much all the details I can think of, but I'm hoping someone knows the name of the game just to check it out. Could be it's actually fairly well known and I just don't know its the same game.

Cheers and thanks for the good recommendations (Revenant, Darkstone). I checked photos of both, but they aren't the game I remember, and they released at the end of the 90s.

I also remember, but I could be wrong, that the interface showed the day and night cycle progressing as a clock or half-clock that rotates, and I remember it having an image of a moon.
That's the only thing that really makes me think "I know that!"
In fact, my first reaction to that was to think "that's such a generic feature, it will be hard to pinpoint any particular game by it!".

My first ideas included the Dark Eye games (Realms of Arkania trilogy), but their day/night cycle is represented by sun and moon moving above a mountain range.

After looking a few more games up, it turned out that this feature doesn't seem to be quite as generic as I thought it would be...so maybe this is the detail that people should concentrate on?

Can you remember more about it?
Where exactly on the screen was that (half-)clock?
Where was the moon?
Was the moon used to indicate the progression of time (did the moon circle around the (half-)clock?
1 minute/day is pretty quick - could you adjust the in-game speed?

I don't remember exactly if the clock was in the lower screen rectangle interface, or in the top of the screen. To my knowledge, the in-game speed could not be adjusted, it progressed along by itself, and the game world changed lighting and stores closed at night.

The moon was in the dial at one point. Not sure if it is a permanent fixture of the clock, or if it is there at night. I remember it being blue, but could be wrong.

The game I remember was entirely an isometric, viewed-from-the-top RPG, click-to-move-your-character game, similar to Fallout, Lionheart: Legacy of the Crusader, Planescape, Geneforge, Avernum. The combat was also similarly clicky.

Another thing that I remember is that you seemed to start in some sort of green centre island or piece, with bridges connecting to city gates(?) from said island, and waterfalls and greenery surrounding the centre island as in a centre. Said city gates had those guards. I think the bazaar was in the other direction (?). Not sure.

My nostalgia glasses remembers it as being quite nice looking, very green, waterfalls, fantasy-like.

The only one that is similar is Druid: Daemons of the Mind (1995), however, I dont think its the same game.

Maybe it's Blood Omen: Legacy of Kain? It has a Day/Night cycle and there is a Sun/Moon dial on the interface, but I don't know if it fits the rest of your description.
