Strangely, dinosaurs seems to be overlooked in video games. I only noticed a few:

Turok - first person shooter
Dream Pinball 3D - got a dinosaur board, but sadly, just not a good game.
Prehistorik 1+2 - platformer
The Curious Expedition - turn-based permadeath explorer sim. With dinos!
Cadillacs and Dinosaurs - old arcade game, can be played via MAME.
Primal Rage - The original dino fighting game. Again, MAME!

Not directly Dinosaurs, but you could take a look at Giants Citizen Kabuto
You can have my sister in-law? Paint her green and you could ride a dinosaur... or play as James T. Kirk and fight a Gorn.
In Freedom Force 2 (maybe even in 1 I'm not sure) you can create your own custom superhero and use a dinosaur model for him, so he'd be a dinosaur with superpowers! :D
I still have my CD copy of Primal Rage - I loved that sooo much back in the day even though it wasn't a great fighter, IT WAS DINOSAURS!!

Unfortunately there's not much else beside Prehistorik & Turok on GOG, which is a shame because the dinosaur used to be such a big player in the late 80s and early 90s even before the Jurassic Park movie captured our imaginations. Joe & Mac (or Caveman Ninja), Dino Wars, and Designasauraus II, etc. There were a few educational simulators too, but their names elude me.

This topic has just reminded me of an interesting chapter of my life when I was wearing dinosaur pyjamas while wrapped up in dinosaur bedsheets. I basically learned to read from dinosaur-themed media.

Maybe Impossible Creatures? Although that seems more based on mixing and matching parts from one species with another (Say, giving lobster claws to a tiger).

Dinosaurs... seems an underused genre, then again it was probably overused in the NES/SNES games.
