I'm honestly not sure anymore. I used to recommend Icewind 1 as a starter, but I think Baldur's Gate might actually be better. It starts off more slowly, but it builds on the overall story so much more.
In Icewind 1, you're up to your eyeballs in enemies on the first few sections, that might be a turnoff to some people.
So now, I'd say that if you don't mind less story and a lot more combat that ends up getting pretty godsdamned hard, go with Icewind.
But if you want a more gradual start, more story, more characters and less of a kick to the teeth difficulty curve to go with Baldur's Gate 1.

I've run through Vampire a couple times before. Once as a Malkavian and once as a Nosferatu.
It bugged me enough to rent it while I can still remember the ending, and vividly, which doesn't frequently happen with me and games, so it's getting the full 7 clans run.

Gotta love a setting where you play as what amounts to a combo of police/enforcer/investigator/troubleshooters on the edges of known space.

Probably. The first real problem you have in that game is learning how to counter a single low-end mage before he kills your party.
In Icewind, it's crypts full of skeletons and ghouls.

Exactly that happened to me when i played Jedi Outcast for the first time (well my FPS suffered from a bit auto-heal experience, especially Bulletstorm (but such a great game))....;)

I also haven't played Dark Forces I and II yet. My first Jedi Knight was actually Jedi Academy (borrowed from a class mate) and afterwards i played Jedi Outcast...

Hmm..will do that then. But i have to play Outlast before that...and all the other games i started so far ;)

I never really did any pen and paper rpgs, but I always loved the Games Workshop Inquisitor game, just a shame I never actually had anyone to play it with...

I would just add that Icewind Dale plays more like a strategy game because of the tactics and mostly the difficulty. Baldur's Gate plays more like a traditional RPG.

It helps in Icewind, especially at the beginning, for all of your party to have at least minimal ranged weapons skills, so that you can rely on a "point-man" (usually a thief) to scout out areas ahead of the Party. Then when a group of enemy attacks you can pause the action, set up everyone with ranged weapons whilst you bring your scout back or out of the way of an area effect spell. Then have the rest of your Party get in a few shots before the enemy charges them, and switch to melee weapons to take out the survivors (who should at least be wounded).

Nope, nobody ever learns.

Beware of the first Dark Forces. It saves the game only between levels, which makes it utterly incompatible to my increased "real life". I've beaten it many years ago and I can remember that I took 5 hours for one of the later levels (trying to find all the secrets included). I would really like to play it again, but in order to do so, I would need to exchange the DOSbox with a build that supports save states. i just can't afford to play more than maybe 2 hours in one session, and often it's less. So DF would be a game I could never complete except for the first few levels.

Jedi Knight is a great game, but it has one problem: If you want to play it on hard you really need all force upgrades. To get those you need to find all secrets. And the huge levels are built in a way that constantly going back is prevented. So if you finish a level and didn't find all secrets, most of the time you have to replay the whole level to get the missing ones. And additionally some secrets can only be found with a certain set of force powers (Force jump or speed > x). So my recommendation for this game would be to consult a walkthrough that concentrates on the secrets to avoid frustration.
