If you're not already a fan of that kind of game I doubt you would enjoy it. If you wanted to pick up any of the Paradox titles I would recommend Crusader Kings (or perhaps one of the others as I think they might be more combat based, not sure as I haven't played them). Crusader Kings is all about keeping a noble family going and expanding your families territory over a number of generations.
Universalis is a bit more of a political simulator from what I played of it.

It sounds like there are times when they get it wrong, but when they get it right, they get it really right.
Europa Universalis, Crusader Kings, Victoria, Majesty 1...I've heard about all those for a while now.

And why is Europa Universalis so addicting?
I need to dig up some manuals, then I can tell you for sure.
Additional - Well...shit. Not finding specific info, even in the manuals.
Thinking that's because they allow you so many options that they didn't feel like typing out all of them.
