Also, in the Redneck Rampage series, there appears to be another game called Redneck Deer Huntin', a spinoff of sorts. As far as I'm aware it's not included in GOG's collection pack.
If you want to be real nitpicky, there are three versions of SimCity with various extras. There's the original, the enhanced CDrom edition, and SimCity Classic, a port of the original to windows. As well as these three versions, there were a texture editor, SimCity Terrain Editor, as well as two skin packs available seperately with certain versions of the game. These were called SimCity Graphics Set 1: Ancient Cities and SimCity Graphics Set 2: Future Cities. I believe the Graphics Sets had multiple versions compatible with different versions of SimCity. Pretty Confusing.

all amazing finds and all qualify! I did not put the SimCity games for the moment, but I would put them when the game is released here (whatever is left from the release). So I would really appreciate a reminder when the time comes :)

added Disciples III Reincarnation
added Arcanum: The Lost Dungeon of Souls
added Earth 2140 (Steam version with resolution support up to full HD)
added Die Siedler – Aufbruch der Kulturen
added Redneck Deer Huntin'

added Exile III: Ruined World
added Blades of Exile
added Anomaly Korea
There's a graphics pack for Carmageddon II, which includes new and switchable skins for pedestrians. To my best knowledge, it's not included with the GOG version. It's called: Carmageddon II: Carpocalypse Now - Official Graphics Pack

Sad times!
Just remembered another one for one of my favorite series: Rayman. The GOG version is Rayman Forever which includes Rayman Designer and Rayman by his fans. There does however exist another compilation called Rayman Collector which includes all the content of Rayman Forever plus another 60 levels made by Ubisoft. This version also doesn't have the missing soundtrack issues that Rayman Forever has. It's rather rare, unfortunately.

I'm not sure if you'd like to count this but there is the original freeware La-Mulana. It's distinctly different to the remake in several regards. Spelunky, for example, includes its original version so it would be nice if La-Mulana did as well. However, I'm not sure if you can even still download the game from their website.

On the subject of remakes, what's your opinion on the inclusion of older versions of games that are generally considered inferior to their newer releases. I don't know who would want them, but for example there's the original Myst, not the re-released Masterpiece edition, and a DOS version of Another World. I'm not sure if including Myst would make sense, but does a DOS version of a game warrant it's addition?

a DOS version does not necessarily warrant its addition. I draw the line where the other version offers a different game experience. The difference may be big (Monkey Island games) or rather smaller (such as your suggestion of original La Mulana or Alone in the Dark DOS). Whereas for example a game updated to a more stabil version or with bugs patched does mean the inferior will make it to this list. If GOG replaced Phantasmagoria 2 with the windows version which has superior video quality, I would not add the DOS version to the list.

added La Mulana (original)
added Rayman Collector
There are two small offshoot minigames in the Settlers series that were released to drum up interest in Settlers 4. One's called The Settlers: Smack the Thief, and was indeed released in English. And the other is called Die Siedler: Die Dunkele Seite. Neither are included in any of the GOG releases as far as I can immediately tell.
