I've currently got the following cheeses:
- mild cheddar
- pepper jack
- havarti
- monterey jack
- parmesan
- mozerella
- cabra al vino
- iberico? not really sure, but it tastes somewhat similar. Either that or some form of manchego.
I've also got a decent quantity of wheat bread along with limited amounts of focaccia, and plan on making some rustic bread in a while. And a grill.
Any ideas on what kind of sandwich combo I should make?

Tried that once, the manchego was a little too overpowering and didn't mix well with the pepper jack at all. Not doing it again.

I have a local shop which mislabels cheese rolls as pizza. Their pizza slices are half a white roll with a bit of cheese and some thick tomato sauce poured on top.

So much betrayal. Still delicious.
