There is also the Maple Syrup Festival in Elmvale, Ontario, usually in May.
That's a fun one :)
Horse drawn wagons and sweet pancakes galore, mostly all very inexpensive, if not free.

If you live on the border, it's a blast. The drive through TO is a major pain in the ass though, but I guess it's still not as bad as NYC or Seattle traffic. Or Detroit traffic. Wow, Detroit was messed up the last time I went there
