If you're interested in anime for mature audiences(=/=porn) Ghost in the shell, Akira, Monster, Evangelion, Berserk, Darker than Black, Rurouni Kenshin: Trust & Betrayal, Code Geass to name a few.

I just wanted to add Tokyo Ghoul to the list above. Also for Berserk, I would recommend to read the manga, the author does a great job with the illustrations.

Currently watching Chihayafuru, on a recommendation . It's... a little girly, filled with touchy-feely crap, but I like it . The animation is top-notch too .

Evangelian - psychologically brutal. Well developed characters. Interesting mythology.

Cowboy Bebop - Western tones in sci fi setting with a wicked Jazz soundtrack

Legend of Galactic Heroes - Epic Space opera. Some good writing

Ghost In The Shell - Scary just how prescient this was. Excellent writing and animation in a Cyberpunk setting.

Black Lagoon - Over the top action accented with Nietzschen philosophy.

The Classics - Revolutionary Girl Utena, Sailor Moon, Rose of Versailles. Any Gundam in the "00" time period.

So i just finished gundam00 again. Fantastic (seravee best gundam)

Are there any show (within our outside of the gundam series) that are like it?

Licurg: Just finished BTOOOM ! . Too short, but not really that good. The gore was nowhere near as explicit as I was hoping from an anime about people on an island killing each other with mini-bombs .
If you are into gore try Elfenlied, Parasyte: The Maxim, High School of the Dead, Corpse Party, Attack on Titan and Terra Formars. Shiki is also a very good series about vampires but the only gore is in the last few episodes.

In no particular order - Genocyber, Shigurui, Violence Jack, Devilman OVAs, Hokuto no Ken the Movie, Ninja Scroll, Blood C, Gantz, Apocalypse Zero, Battle Royal High School, Angel Cop and Corpse Party .
