nightcraw1er.488: That's really impossible to say. At every stage of life new things appear which are influential, there was a dungoen crawler on the acorn at school, and granny's garden on the nimbus.
Baldurs Gate 1/2 I have played many times over the years. GTA 1-Vice City were classic. As well, it depends on genre, I agree with several of the posts above, Thief, Morrowind, Warcraft 2 was pretty good. No-one mentioned Doom yet?
Ultima 7 was a game I spent weeks on, still have the paper with each town mapped out.
The list is endless.

darkness58ec: Can you post a pic of the paper with town maps? I would love that.
Here are some examples, and bear in mind these are some 20 odd years ago!

Awesome! Thanks. I will use these in a new playthrough....

You have really good handwriting. Of course, my handwriting has always been atrocious. When I got to college my future wife cracked open one of my books and saw my handwriting inside the cover. She said "Awww, did you get this when you were little?" I said, "No, I picked it up last year." Married me anyway.
Blade Runner
Myst, Riven those two games just blew me away back in the day
Witcher 3 :DDDDDD
Silent hill 1
psychonauts.
yet to be made
Before I was 10, definitely Bio Menace
Chrono Trigger
Silent Hill 2
Super Mario Bros. 3
Final Fantasy VI
RollerCoaster Tycoon

Can't narrow it down more than that, unfortunately.
Metal Gear Solid. GOG should put it up for sale, Konami did a PC version of this game :).

Nintendo Wars series

Spans 20 years from 1988-2008 but is basically the same game over and over and if they release 10 more games without changing the basic formula, I'd still play them all. Thanks to the puzzle-like nature of the game, it doesn't matter at all if the AI is predictable, it's still a challenging game series but dead simple to learn and control, and massively addictive. One more turn, one more mission, replay to get an S-rank, it never gets old. Probably the most indestructible series for me, simply timeless. Pure gameplay, pure fun.

Yep. Advance Was and DS stuff are all absolutely fantastic. The sense of accomplishment after each level was pretty much guaranteed when I played these. Really never gets old. Never tried earlier or later games though.
