I can really only answer your first question.

Galaxy is really independent of how you decide to get your game files. Though Galaxy has an option in Extras, to download Offline Installer if you want to use it for that, instead of doing the direct download & install that it offers by default.

Galaxy being installed, doesn't impact your ability to download your game files via Offline Installer browser links in your library in your web browser.
Yes you can download and install offline installers, but it seems Galaxy client may detect your offline-installed games and possibly start updating them, and/or launches Galaxy whenever you try to run those games, unless you make a separate shortcut directly to the game executable etc...

The only reasons I don't have the Galaxy client installed:

1. I don't like the fact it may start messing up with my offline installed games, or even just that it launches itself if I want to run a GOG game that I installed with offline installers. While that may be useful for many people (you can download an offline installer somewhere where you have fast internet, and install it at home and use with Galaxy with slower internet, without having to download the game at home with slow speed), I'd prefer Galaxy and the offline installed games would be totally separate in that sense.

2. I want to make sure my offline installed games run correctly without the presence of the Galaxy client (ie. there are no critical dependencies to the Galaxy client), and I guess the only way to make sure is not to have the Galaxy client installed on the same PC.

Otherwise I wouldn't mind having Galaxy installed, and even use it occasionally. Too bad. Maybe I will install it on some separate laptop, just so that I can test its functionality from time to time, but my main gaming PC will remain Galaxy-free, unfortunately.
