This wasn't included in the Extras, but is present there nonetheless. I noticed it whilst looking around for the .avi files answering a previous question
If you open up C:\Program Files\GOG.com\Gabriel Knight\GK1.gog in WinRAR/Winzip, then browse to the AVI folder, there is a video called simply makinggk.avi.
It's horribly low quality though - I'm unsure if a better version exists anywhere.
There's also a promo for Gabriel Knight 2 - beast.avi.
Good find. Looks like it's the same video with the same quality as the one on my retail CD, so if a better version exists, it's presumably on tapes somewhere.
I guess the original tapes are probably lost to the ages. We'll have to make do with the crappy overcompressed version that came with the original game. It's still interesting to watch though.

Very cool, thanks for the link!
The quality is pretty good compared to Gabriel Knight 2 outtakes video. ;)
It's strange that they "hid" the video in the .GOG file like that - it takes up a pretty large chunk of the CD. I wonder if they didn't realize it was there? It seems like it would be much more logical to take it out of the main file (to save on bandwidth) and then offer it as an optional download for those who are interested.

Holy cow! Tom DeSalvo! Welcome! It is truly very exciting to see someone involved in the development of such a legendary game as Gabriel Knight.
According to your bio on moby, you're doing 'net stuff' now. Do you miss game development at all?
Oh and I loved that making of video. Very fun to watch. :)
Welcome Tom - and thank you. I mean a totally big thank you.
