So I have a few problems.

I can get the game runnin on ScummVM with Roland audio, but on some settings it skips dialogue all together. And on other settings there isn't voice acting.

Is there a way to have the CD voice audio and Roland MIDI, or is it just a case of one or another?

I didn't have this problem with DosBox, there must be something wonky with ScummVM.

Det_Bullock: I didn't have this problem with DosBox, there must be something wonky with ScummVM.
That makes me wonder, is there a way to get the GOG version of this game to use DOSBox again?

I'm not sure, last time I played the GOG version it didn't use ScummVM yet.
I'll probably install it with Galaxy and see what is contained in the game folder and play with the settings a bit.

I can't tell if there is a dos executable in the folder, and I can't figure out how to configure the version of ScummVM the game comes with.
I tried using my installation of ScummVM but I can't get the MT-32 emulation to work, GeneralMIDI with Fluidsynth and the Timbres of Heaven 3.2 soundbank works though.
Weirdly enough if I run the ScummVM executable in the game folder it seems to read the configuration of my ScummVM installation while if I run the game with Galaxy it sounds noticeably different and I can't tell what device is using but I'm sure isn't the Timbres of Heaven 3.2 soundbank and judging from some YT videos it isn't from MT-32 emulation either.
I'll need more time to figure things out, it might take a while.

If you're using GOG Galaxy you should be able to roll back your version to one that uses DOSBox.

Crimson_T: If you're using GOG Galaxy you should be able to roll back your version to one that uses DOSBox.

I'm not familiar with ScummVM's MT-32 emulation, but MT-32 + Sound Blaster works fine for me with Munt. If you have Munt installed, you just need to edit gk1.ini (in \GOG Galaxy\Games\Gabriel Knight) to include these lines:

native_mt32=true
music_driver=windows_MT-32 Synth Emulator

I don't have any issues with missing voice, which is unfortunate because Gabriel's voice acting is intolerably awful and the game refuses to let me turn it off.

It still works in DOSBox, but you'll have to configure it manually.
