You may try old builds for Grid Cartographer (they are free) here:
https://gridcartographer.com/download/unix.html

Please note that Eye of the Beholder 3 was made on another engine and Grid Cartographer just couldn't handle it.

Great, thank you a lot! Both versions seem to work on my MacBook, but they require a License Key to start.

Oops, sorry. Then it means that the only legal way is to purchase that key for 19.99$.

I couldn't find older builds without the key requirement.
That's okay! Thanks a lot for clearing that up. It's not a super cheap tool but I guess it could be worth the money. I wonder why they don't promote the Mac version on the website.

"Also, and I'm sorry to end on a negative note but, this will be, like other emulators, Windows only for the foreseeable future. Adding Linux and macOS support for LibRetro emulation will take a disproportionate amount of resources away from other development work and I just can't justify it in the face of other features at this time."

Oh that is too bad... thanks a lot for looking it up! I also asked in the Grid Cartographer Discord channel. It is not supported for Mac anymore and the version you have linked is officially not available anymore. I guess I have to use my trusty old pencil.
I'm actually able to use The All-Seeing Eye on my Macbook Pro if I install it together with any of the EoB-games in a WineSkin wrapper (easiest is to use Porting Kit to make such a wrapper https://www.portingkit.com/). It works pretty well, but for some reason the game stutters sometimes when moving the mouse, has not figured out yet how to fix that...
