FlatOut 1 works very nicely on my El Capitan Macbook Pro 2012 using Wine 1.5.27. The menu fonts are quite rough at some points but the game itself looks beautiful with no glitches whatsoever and runs quite smoothly. There's some lag when there's a big bunch of cars battling, but I can't say if it's my machine's specs that are lacking or if it's a Wine problem.

Is there a possibility that the good GOG team could iron out the small problems and come out with an official Mac version?

It's likely a legal/rights issue, not a technical issue, that's holding it (and many many many other games) back from official Mac support.
