AI is completely broken. From the beginning of the game, opponents can hear me even if I crouch or crawl and see me through solid objects (walls, leaves, etc.), so there is no way to hide and play stealthy. What's more, they see me from huge distances and are able to hit me flawlessly. If I kill an enemy, then enemies around the area always know where I am within a few kilometers. They see me and track through the solidd objects so I can't hide again.
I am currently in the twelfth mission (Boat) and the game is completely unplayable. I don't have a goal approach. Enemies sometimes spawn behind me, or near somewhere in the bushes and immediately kill me. Alternatively, they kill me with a sniper rifle / rocket launcher from a distance which I can barely see them even through the scope with maximum zoom.

How has GOG repaired AI if it is still completely broken? The game has now become completely unplayable.

Is there any way to fix this?

I am surprised as I thought that fix did indeed fix the game. With my disc version I just install the unofficial patch as the game is horrible without. You could try FCam on top of your game or the 1.41 patch only but no guarantee it will work with GOG's prepatched version. A pity as the game is great in my opinion (finished it many times, also on highest).

You should contact GOG's support as they are sure to want to know that the fix is not working 100%.

GOG changed one tiny thing that stops enemies from wallhacking tents. The rest of the game is working as intended. Only certain bushes and vegetation will hide you. The game is, and always was that way.

The 1.41 fan-mod is not going to have any different effect. These all just change a single number in canvas.lua to a value that no longer allows the wallhacking. GOG's version just happens to be suitable for multiplayer too. FCAM changes a million things and makes your saved games no longer compatible. For some, that is desirable but it's hardly a generic fix for AI.
Same here. I'm stuck in the boat level at medium difficulty and it seems nearly impossible to move on. I remember I finished this game twice when it was released at medium and challenging difficulty and now it feels so much different. The enemies can always see you at long distance and kill you with one shot. Levels need to be blayed several times cause there isn't the possibility to save and chackpoints are rare. Unplayable

Is Boat the only level that gave you trouble like that?
Was the "AI Auto Balance" option on or off at the moment?
Can literally all the enemies see you from that far or only some of them?
Do you have any extra patches or mods installed?
