I'm having issues getting Fallout 3 to run. I'd click the play button, the Fallout 3 launcher comes up, I select my video settings, then click the play button, the game starts, and then immediately closes. What's weird is that I never had this problem before. I'd put in a few hours of Fallout 3, and now I can't launch it on either my desktop or laptop.

You "never had this problem before" and played the game on the same computer(s)? Was there a windows update or something else? There are many threads over at steam forum, maybe search there.

I'm asking here because I've been playing the GoG version. Not the Steam version. If I was playing the Steam version, I'd be asking over there. I Googled the specific problem I was having and came across a thread posted by someone on these forums detailing the exact same problem I'm currently having.

I have Fallout 3 installed on both my desktop pc as well as my laptop.I spent a good chunk of time playing it on my laptop, then I moved to my desktop to continue my playthrough. But then yesterday, I tried to run Fallout 3 on my laptop and ran into the issue I posted about. I then tried running Fallout 3 on my desktop and encountered the same issue.

Now, on the flipside, I can run the GoG version of Fallout New Vegas with no problems.

GPU in each. It might be a driver update that took you out. Happens for older games.
I do not know if you're having mods on your Fallout 3 that could break your game somehow with some incompatibility/conflicts.

But i suggest to give a try to the Anniversary Patcher and see if it will allow you to make your Fallout 3 working again.
I've been playing on the GOG version of Fallout 3 for a long time with it myself (along FOSE+various of its plugins) and the game still works for me without trouble (i just tested it now to see).

The anniversary patcher :

make sure to read the documentation on how to install

Same issue here, I have a Geforce card. I suspect a new driver update is at fault, because the game was runinng no problem a while ago.

Might be worth having a look into re-rolling the driver.

I'm on the Latest (566.36) drivers on my NVidia RTX card and FO3 is still working fine here. But it could still have issues on older GTX cards.
