Is there a way to reset the controls back to the unity setup? or am I rebinding the entire controls myself?
I messed up when rebinding a few keys so I hit the default button expecting the keys to go back to the unity controls but it changed to what I think is the vanilla setup, its not save specific either the controls changed for all characters and a new one.

The config files are either located in C:\Users\<Your Windows Username>\AppData\LocalLow\Daggerfall Workshop\Daggerfall Unity
Note: AppData is a hidden folder. Type in bar at top of explorer to add it if you don't have hidden files visible.
Or if you set it up as portable, in the PortableAppdata folder where you uncompressed the daggerfall unity.
I am unsure how the GoG version handles this. I would definitely just grab the daggerfall files and the newest version of DaggerFall Unity itself and put elsewhere outside of GoG. I don't think the GoG version has been udpated in a while. Though it does include a bunch of mods preinstalled I suppose. You could just update the dfunity install in it. (Galaxy may overwrite it though)

Anyways, one of those two locations will have a keybinds.txt file. You can delete that and it will create a new default on next start. I would have assumed this is the same as hitting Default in the controls area of Unity though.

Otherwise, if using Galaxy can try to "verify/repair" the Unity version, if the GoG version has things manually setup different than Unity itself.

Zandrag has the answer but really, at this point you really should consider switching to pure Daggerfall Unity:
