I'm interested in playing through them, but i've heard these two are quite buggy. What are the serious (i.e. plot-stoppers, etc.) and moderate bugs in Arena and Daggerfall? Can they be fixed, avoided or worked around?

Can I manually install the [url=http://www.uesp.net/wiki/Daggerfall:Files]unofficial Daggerfall patches listed here[/url] to the gog version without having to use the DaggerfallSetup file on that page? What of those unofficial patches do I need to install, and is there a certain order they need to be installed?

You have to distinguish game-breaking and fun-breaking problems. The "... aged well ..." thread in this forum contains a lot of information about all sorts of problems, plus the (diverse) opinions of several posters regarding these issues.
The latest version of Daggerfall has at least 2 game-breaking bugs, the "void" bug and the "stuck in the wall" bug (to my knowledge, both are described in the UESP wiki). For the void bug there is a workaround, but if you are really stuck in a dungeon wall, there is no other "solution" than to load an older save game (thus don't forget to save the game occasionally). The void bug happens occasionally, the stuck in the wall bug is rare, according to my personal experience (or I know instinctively how to avoid it). Others may have made other experiences, and there are several reports of other game-breaking problems, but no evidence that they have been caused by the Daggerfall software.
Fun-breaking bugs are an entirely different story. Depending on your playstyle and expectations, you may find quite a lot of those, many graphical issues, several exploits, inconsistencies, design weaknesses, etc.
The Arena situation is similar. You find many reports of fun-breaking issues, not many of really game-breaking bugs. i have completed the main quest of Arena at least 3 times over the years, with different characters, without encountering a game-breaking problem.
I myself am a rather casual role-player and I am not detail-minded. I tend not to notice or disregard minor issues. Thus I would say that both games don't have any severe problems for me which would prevent me from playing or enjoying them - but this opinion / perception is not shared by everyone.

So the two are not full of easy to trigger game-breaking bugs as I had feared, and the void and wall bugs sound like they're easily remedied by simply reloading an earlier save or using the Alt-F11 thing you mentioned, even if it is an annoying setback at times. That actually sounds reassuring, I thought the games had huge problems the way it sounded.

Should I install the unofficial community patches for Daggerfall? And what about Daggerfall's save corruption bug? How often does that happen?

From what I've read, save corruption in Daggerfall happens because of not enough available memory. From what I saw in GOG's config file, it has enough memory for that to not be an issue.

However, someone must make main questline walkthrough step by step here, as you can screw it and no patch will help. I was browsing UESP for proper description of required steps, but it is way too obscure and doesn't help.

I noticed that something is wrong when "Tutorial Lesson 7" never showed up...

It might be possible to recover from the stuck-in-the-wall bug. I can think of two methods that might work:

1. If you have a portal spell and a portal, return to it. Of course, this assumes you have a portal handy.

2. Save your game (in a different slot just in case!), reload it, then immediately press Alt+F11. This should take you back to the entrance of the dungeon.

The installation sequence looks fine. Regarding the other unofficial patches and modificatins, I can only advise you to read the readme files and install what you think makes sense for you. Compare the list of fixed or added files with that fixed by other patches and make backups before installing.
There are also mods like ANDYFALL and WEREFALL which change the gameplay drastically (and make the game more difficult). If you want to play one of these, you better install them to a copy of Daggerfall or consider a second installation.

Sounds good. I don't there will be any conflict as the other patches don't seem to overwrite the same type of files.
Arena can freeze when starting to talk to a person on the street. This is an old bug, as I read about it in Arena's game review from 1990ies. So it's good to save often.
Hi guys, I have problem in Elder Scrolls Arena in Labyrinth with the second pices of staff of doom.
I'm at the end of labyrinth i can see the pices, I take the pice, music fanfares are played but I have no massege, my inventory do not recognises that I've got it and it respons every time i came in to the location.
Any of you had this problem? Do you have any solution for this?

I never had this problem. So you answered the final riddle ("What force and strength ...") correctly and received the piece, but it doesn't show in your inventory, nor were there any messages.
I haven't been in this dungeon for some time, so I don't remember HOW you received the piece. Did you have to pick it up? Was the fanfare for solving the riddle or for obtaining the piece?
Perhaps you could watch one or two playthrough videos?

I solved the riddle and I litterly can pick up the pice but game can't fully register it and thus I can't get the window with infromation what to do next. I pick it up, it dosen't apperes in my inventory and the pice respawns every time when location is loading.

Sounds like a missing requirement, something you have to do before you can obtain the piece, but I may be wrong. Like I said before, have a look at a playthrough video, it might give you an idea what's wrong.
