Oblivion tends to crash a lot in the overworld, most of the time I'm just walking around or fighting an enemy and BAM! game crashed or freezes, and I noted that the game will always crash after finding a monster or bandit dead in the roads.

I got the Crash Recorder thing which creates a file that tells me that the crash was related to Overloading/inability to process data. While this is clearly the engine's fault (in fact, it's the biggest problem with Bethesda's engines is that they have poor data-streaming), is there a script or a mod that makes the game crash less often?

Not that I know, but it looks like Oblivion crashes more on some PCs (and for some installations / configurations) than on others, and possibly for different reasons.
I've been playing Oblivion from the beginning on several different PCs, and I have never encountered many crashes. And all my crashes (with perhaps one or two exceptions) have been associated with cell changes (when new data have to be loaded). It helps to save occasionally.
On the other hand, it also looks like there are mods that make the game crash MORE often, either individually, or because there are conflicts between different mods or with the loading sequence of the mods. If I remember correctly, there is a mod helping to analyse mod conflicts, and there are mod loading managers.
