If I own Dying Light: The Following – Enhanced Edition, as shown on this page:

Then do I also own all the content in Dying Light: Definitive Edition, as shown on this page: https://www.gog.com/game/dying_light_definitive_edition

The reason that I'm asking is because... the pages are as clear as mud.

No. If you own only the Enhanced Edition, you won't get the DLCs listed on the right side of the page. Though some of them are free, but they're not very good, in my opinion.
You can also see in the list with the check marks what it is included in each version.

Well, first I look at the comparison chart with the list and the check marks of the included DLC's for each edition, and I see which DLC's my edition lacks. But then I look in my games library at the download page for the Enhanced Edition, I see that *all* i.e. every one of the supposedly lacking DLC's are in fact there, in my account, ready to download.

Except:
Crash Test Skin Pack;
The Following DLC;
Bozak Horde DLC;
Cuisine & Cargo DLC; and
Ultimate Survivor Bundle DLC
... are all listed at the very end of the page without download links attached. I am guessing that they are included in the main, 25gb installer.

But I'm not sure.

So, still really puzzled.

I think that you already own the Definitive Edition, which is basically the Enhanced Edition plus the rest of the DLCs listed in the download page.

If you open the Definitive Edition's store page, it should tell you if you own it by only having the "Buy as a gift" option available.

Yes, they are part of the main game now, listed at the top of Enhanced Edition's description. They just don't mention the inclusion in the main installer.
Short answer is: If you have any DLC available for purchase then you own the Enhanced Edition.

Unfortunately there's no way to upgrade without purchasing each individual DLC. My mistake was buying the game back in 2018 and then purchasing DLC as it came out ..... if only I could turn back time.

I bought this game here years ago, but never downloaded it until now, and I had a similar question. Yours is the first answer I've run across that addresses this clearly.

They have "The Following DLC", "Bozak Horde DLC", etc. all listed individually in the backup download section, as if you can download them, but with no file size indicator listed or any way to download them. I wish GOG would remove those orphaned listings, as they serve no purpose that I can see, and cause a bit of confusion.

Anyway, thanks again. I'll sleep better tonight knowing I won't need to send an email inquiry to some poor worker at GOGs customer support. :-)
