Grab the Windows version of GZDoom.
Copy your DOOM/DOOM2/TNT/PLUTONIA.wad(s) into the GZDoom folder.
Set the GZDoom.exe to 'Open with Wine', if it isn't already set to.
If you have Brutal Doom, go into Properties and set the brutal.pk3 to Open with gzdoom.exe.

Now, whenever you wanna run the old Doom games, simply launch the GZDoom.exe.
Wanna launch Brutal Doom? It'll launch no problemo!

As for the music:
Go into OPTIONS
Go into SOUND
Set it to OPL Synth Emulation.

I've done all this with Linux Mint 17.3 and Linux Lite 2.8. Works great.

Another ironic tidbit: the Linux versions of ZDoom and GZDoom require alotta jumping thru hoops to get them to work. But the Windows version of GZDoom runs just fine via Wine. Weird...

I don't agree.

There are prebuilt deb files for zdoom.

Compiling from source has gotten a lot easier since the inclusion of OpenAL. Previously you had to use fmodex which is a nightmare.

The deb files I grabbed didn't work. Just as with ioQuake3, I ended up resorting to Wine.

Which distribution do you use? What was the problem? libpng12?

I use Linux Mint 17.3 and Linux Lite 2.8. ZDoom literally wouldn't launch. When I checked out the Linux forums there was a WHOLE LOTTA command line lingo. In other words: jumping thru hoops. The Windows version, however, ran silky smooth via Wine. I like to keep things simple.
Okay. It's you choice.

I think using wine is junping through burning hoops :)

How is using Wine "...jumping through burning hoops"? You click it, it works.
I like simplicity and efficiency.
*UPDATE*
I got Brutal Doom working smooth in Linux Mint 17.3 natively.

Go to Home folder:

.config folder
zdoom folder
Open the zdoom.ini

Under [Doom2.Autoload], type:
Path=brutalv018a.pk3
Path=DoomMetalVol3.wad

Repeat for [Doom.Autoload], [Doomtnt.Autoload], and [Doomplutonia.Autoload]

As for GZDoom? It requires additional libs I ain't got. Nonetheless, it works great with ZDoom.

Grab ZDoom for Win/Mac/Linux (Ubuntu) here: http://zdoom.org/Download
Grab Brutal Doom v018 here: http://www.moddb.com/downloads/brutal-doom-version-181
Grab Doom Metal music file here: http://www.moddb.com/mods/brutal-doom/downloads/doom-metal-soundtrack-mod-volume-4

You don't need to use Wine at all. GZ Doom and Zandronum have Linux binaries, allowing you to run Brutal Doom natively on Linux.

Kind Regards,
