Just started my first game with Death Knight as the warrior and the "paladin" as a survivor, with the recommended attributes. But is the Survivor, with his low strength, going to be much use in battles? Or is it all about sneaking and pickpocketing (googled that lockpicking is broken.)

I think you've picked the hardest route. The general advice is that you're best off having yourself as a warrior, and the death knight as a mage (not the other way around). Theif classes are usually frustrating to play as, it's only multiplayer RPGs that have lots of work on balancing that manage to get it working.

Actually my "Survivor" has turned into an agility-based warrior (so bows and daggers) with a fondness for pickpocketing :). I was glad of the starting survivor skills - saved some cash early on.

The death knight is a more standard strength based warrior, though with generous helpings of agility to take advantage of the sharpening skill.

And yes, that leaves me with no mage - currently the two are at level 18 and only know the level 1 heal self spell as far as magic goes. Lack of magic ability definitely looks like it may bite me at this point - just cleared Act 2 battleground dungeon 1 and the whole battleground surface, and some anti-magic protection and crowd control attacks could really have come in handy. Of course I switched the game to Hardcore from Action since 99% of Act 1 was so incredibly easy, so I'll likely just tone it down later on when the crowds get too unmanageable.

And hey, I could always upgrade some doll to be a wizard or something, right? Not too high level of course. Currently the Skeleton Doll is the only one I have, and it's basically a pack mule, usually loaded down with 10x its max burden.
